Authentic Louisiana Cajun Food Truck On Rayford Road

Spring, Texas – July 9th, 2015: Bebe’s Cravn’ Cajun is an authentic Louisiana Cajun food truck on Rayford Road in Spring, TX. It is owned by Louisiana transplants Carl and D’ette Hamilton from Baton Rouge, LA by way of Plaquemine, LA.  Opened in December 2012, they have really gained a following for their specialty Cajun dishes and especially their Cajun Boiled Crawfish (best in the area in my opinion).   Staple dishes like Louisiana fried catfish and shrimp, red beans and rice, jambalaya, fried alligator, shrimp n’ grits, hushpuppies and homemade remoulade.  Surprisingly, they have very good hot wings too.  If you are lucky you will catch one of their off menu specials like smothered pork chops and succotash.  Bebe’s food is so good that they have people drive from Pearland and even Dallas for their food.  If Crawfish Boiling was an art, Carl would be the Vincent Van Gough of it. I sat down with Carl and D’ette for a round of questions and answers about their operation.

Where did the name Bebe’s Cravn’ Cajun come from and why did you choose to open a food truck?

That is our son’s nick name (BeBe) and we were always craved that home style Cajun food when we would go out to eat. Unfortunately, we couldn’t get the taste we wanted at the price we wanted, so we found an easy, fun, inexpensive way to do it our selves and share with the community.

We opened a food truck for the flexibility of hours, because we both have other jobs.  We have seen too many brick and mortar restaurants fail, and with a food truck we have less overhead and more location options.

Tell me about the inspiration for your menu.

We combined a little of my mother’s and grandmother’s recipes with Carl’s mother’s and grandmother’s, and also a bit of our own .

What are your most popular menu items and what do you think you are famous for?

Gator has become most popular, but Crawfish is what we are famous for.  The Shrimp N’ Grits and our wings are other dishes our regulars love.

What should someone coming to Bebe’s Cravn’ Cajun expect that they have never had before?   

Flavor. When most people hear Cajun their first thought is “HOT”, but real Cajun is about Flavor with a little kick.  Anyone can add extra spice for flavor,  but our recipes have complex flavors.

Why is your Boiled Crawfish so darn good?

The flavor is in the water, not shaken on the shells like others around.  We think just shaking some seasonings on the outer shells is cheating and doesn’t give the actual meat of the crawfish the authentic flavor.

Do you do special events or caterings?

Yes, on the off season we go to the local breweries like B-52’s Brewing Co. and Southern Star Brewery. We have done festivals such as the Conroe Cajun Catfish Festival and we also do some special event catering jobs.

Clean, Authentic, Fun, Fresh (food), Reasonable (prices)
